Blueberry smoothie

Want to get your day off to a good start? One of the best ways is with a nutrient-rich smoothie.

Blueberries are high in fibre and loaded with antioxidants. They are also an excellent source of vitamins K and C. Bananas have fibre, potassium, vitamins B6 and C. Add to that the superfood raw cacao (available at most health shops), which is one of the richest sources of antioxidants of any food, and you’ll leave your house positively buzzing!

Ingredients:

• ½ cup blueberries

• 1 banana

• 1 Medjool date

• 1 tsp raw cacao powder

• ½ cup coconut water

• Splash of milk (optional)

Recipe:

Blend ingredients in a high-speed blender (I use a NutriBullet). Add toppings and enjoy.

Tips:

Add more or less liquid to alter the consistency (I like my smoothies thick, so I use less liquid). Serve with granola, sliced banana, shredded coconut, frozen berries – whatever you fancy!
