Watermelon cake
A healthy dessert alternative that will get tongues wagging.
Serves: 8
Time: 15 minutes
Ingredients:
3 thick slices of watermelon in colours of your choice
400g smooth cottage cheese
75g icing sugar
3ml vanilla essence
350g mixed fresh berries
Method:
1 Peel the watermelon slices until they are all the same size.
2 In a mixing bowl, beat together the cottage cheese, icing sugar and vanilla essence.
3 Layer the watermelon slices on a cake stand, with a layer of cottage cheese in between each.
4 Top with the remaining cottage cheese and pile on the fresh berries.
Mexican watermelon salsa
A divine side order at a braai.
Serves: 6
Time: 5 minutes + marinating
Ingredients:
1 small tin whole kernel corn, drained
1 can black beans (or red kidney beans), rinsed and drained
1 small red onion, finely sliced
1 jalapeno pepper, seeded and finely sliced
1 clove garlic, minced
Handful fresh coriander, roughly chopped
5ml ground cumin
Juice of 1 lime
20ml chilli avocado oil
750g watermelon, peeled and cubed
Method:
1 Place all ingredients except watermelon in a medium bowl. Mix well and refrigerate for an hour.
2 Mix in the watermelon just before serving.
