Strawberry cake with cream cheese frosting

This gorgeous strawberry cake is made with fresh strawberries and a delicious cream cheese frosting. It is incredibly easy to make, and the frosting and mashed strawberries work perfectly with the soft vanilla sponge.

Ingredients:

120g butter

120g sugar

2 eggs – lightly beaten

½ tsp. vanilla extract

120g plain flour

2 tsp. baking powder

12 small strawberries and extra for garnishing – only remove leaves, don’t cut the strawberries

Strawberry cream cheese frosting:

220ml cream cheese

200g butter – soft but not melted

⅓ cup of strawberries – mashed

100g icing sugar, sifted (adjust to taste)

Recipe:

1 Preheat your oven to 180°C.

2 Line a cake tin with baking paper and cover with non stick cooking spray.

3 Beat together the butter and sugar until pale.

4 Gradually beat in the eggs and vanilla.

5 Sift together the flour and baking powder, and then gently fold it into the mixture. The mixture will appear very thick.

6 Put the mixture into the cake tin, and using your fingers, gently coax it into the edges, making sure it is evenly spread.

7 Put strawberries into the mixture – they will stick out.

8 Bake the cakes for around 20-30 minutes or until the cake is golden brown. Insert a wooden stick into the cake, and if it comes out clean the cake is done.

9 While the cake is cooling, whip the butter and cream cheese until smooth. Stir in the icing sugar and mashed strawberries. Once the cake has cooled, ice the cake and top with whole strawberries.

10 Eat immediately.
