Gingerbread biscuits

If Christmas had a taste it would be these gingerbread biscuits. They are perfectly sweet and spicy, crisp and golden. The kids adore them, and I might add that adults are also rather fond of them too. You can decorate them and make all sorts of Christmas shaped biscuits.

For something fun try making them into Christmas decoration for your tree. Just remember to leave a good-sized hole in the top of the biscuit before you bake them. Then thread a ribbon through the hole and there you have it – your very own edible gingerbread Christmas decorations.

Ingredients:

350g plain flour

2 tsp. baking powder

4 tsp. ground ginger

4 tsp. ground cinnamon

100g butter

175g light brown soft sugar

1 large egg

4 tbsp. golden syrup

1 tbsp. water

Method:

1 Preheat your oven to 180°C.

2 Put the flour, baking powder, ginger and cinnamon in a bowl.

3 Rub in the butter until the mixture resembles breadcrumbs.

4 Stir in the sugar, egg and syrup, and about one tbsp. of water to bind it into dough. Add more water if needed.

5 Place mixture on a floured surface and knead to bring the dough together.

6 Split the dough into two and roll out until its about 0.5cm thick.

7 Use festive biscuit cutters to cut the dough.

8 Place on a greased baking tray and bake for about 10 minutes.

9 Place biscuits on a rack to cool and set.

10 Store biscuits in an airtight jar.

Dee’s notes:

• The biscuits will be quite soft when you take them out of the oven, but will harden up as they cool down.

• You can make a simple icing to decorate them with using sieved icing sugar and a drop of water. Add a drop of colouring to make different colour icing.

• The icing can also work as “glue” to stick on smarties as buttons or eyes for your gingerbread men.
